Can someone tell me how to flip tiles and sprites (if it's even possible).

Flipping tiles is easy. You have to edit the tileset tho.
Map16 allows to flip tiles along the X/Y-axis.

For sprites it is not possible without major code hacks which most likely will never happen.

Or you could flip the models and their animations, but that'd be difficult.

Who needs enemies walking on their heads?

You'd have to code some anti-gravity as well, which certanly no one will ever do for NSMBDS.
